Pavlova

INGREDIENTS

6 egg whites  (try to use the ones that have not been in a fridge or too fresh)

¼ teaspoon white vinegar

½ teaspoon vanilla or almond essence

Pinch salt

350g caster sugar

If high humidity add 1 dessertspoon of  sifted cornflour.

STEPS

  1. Beat egg whites and salt until stiff
  2. add sugar in four lots making sure dissolved before adding more.
  3. Add vinegar and essence near the end. If using cornflour fold in at the end.
  4. Place on papered tray bake in low oven about 100c for 1 to 1 ½ hours leave in oven to cool.
